Recipe Post: Healthy home made Miso

Yummy Home Made Miso

I thought I would share one of my favourite recipes. It is for two people but it is so yummy I always end up eating it all to myself.

Miso Soup

1 Garlic Clove, peeled and thinly sliced
2.5 cm piece of fresh root ginger, peeled and finely sliced
1 packet instant miso soup
100g skinless boned white fish, cut into chucks (can be substituted with tofu)
8 mangetout
1 red pepper, deseeded and chopped
1 pak choi, finely sliced
2 spring onions, trimmed and sliced
1 handfull beansprouts
1 handfull fresh garden peas

1) Bring 500ml water to the boil in a medium sauce pan. Add the garlic, ginger and miso. Add the garlic, ginger and miso. Boil for 1 minute and then add the fish, mangetout and red pepper. Bring back to the boil and skim any foam that accumulated. Cook for 2 minutes

2) Add the pack Choi and spring onions and cook for a further minute

3) Divide betweens bowls, add beanspouts and peas

When I go grocery shopping on Wednesday I will purchase ingredients for this recipe. I think I see steam coming of the wonderfully healthy and yummy soup.

This is perfect ! It is still cold here, the winter seems to be going on forever and I love miso soup. I just never learned how to make it myself . This is just what I needed, thanks !

I live on a remote peninsula in the Pacific NW of the US, but I poked around in all the stores and found all the ingredients to make this wonderful soup. I just gobbled it up. Thanks so much for posting the recipe! Pat
